Grilled Flank Steak Tacos
There’s not much better than a steak taco, especially one with steak that has been marinated all day and is then grilled over an open flame and topped with homemade chimichurri sauce and charred peppers. Mouth watering yet? Mine is, and I just ate.
Gameday
Brisket
One of my favorite things to do in the fall is put a brisket on Friday night so it’s ready for college football kickoff of Saturday in the fall. To some, briskets are intimidating, and it takes practice and patience to get it right, but when you do, your friends and family will love it.
Caveman T-Bone with Whiskey Marinade
Who else loves a good steak? This one is marinated in a fantastic whiskey sauce and then finished caveman style, directly on the hot coals.
Smoked
Meatloaf
“Hey ma, the meatloaf! We want it now!” This ain’t your mama’s meatloaf (no offense to her). Full of smoky flavor, not dry at all, and a great sticky saucy crust. It also does the impossible: get kids to actually like meatloaf!
Beef Short Rib Tacos
Short ribs are absolutely delicious, like brisket on a stick, but they take a fraction of the time to cook. Shredded and eaten on tacos with an avocado cilantro crema and it’s a combo that’s hard to beat.
Tri-Tip Fat Sandwich
My take on the Rutgers grease truck fat sandwich features a reverse-seared tri-tip sandwich topped with fried onion straws, mushrooms, and pickles, and a creamy horseradish sauce.
