After many of the Big Green Eggfests got canceled or postponed due to Covid-19, we had resigned ourselves to not doing one this year. But The Ohio Eggfest is moving forward with a somewhat virtual competition on August 15, so we decided to join the fun.
Instead of a traditional attendee-focused Eggfest, this one will be a judge-based competition that will be streamed on their Facebook Live. While we are sad to not get to connect with over 1,000 people like we did last year, we are looking forward to reuniting with friends such as Kenny from Thin Blue Smoke BBQ (formerly Buns ‘n Guns BBQ). We’re also excited about meeting other teams because that camaraderie is what it’s all about.
We have some ideas in mind for the dish we will make, but we can’t divulge that just yet. We need to do some testing and make sure we’ve got it in a spot we like it.
Last year, we made the Belly of the Beast — a showcase of pork belly three ways: pork belly burnt ends, house-cured cherry wood smoked bacon, and bacon jam with smoked figs for a bite of flavor explosion, as well as grilled angel food cake topped with a coffee drizzle and smoked pecans.
It was good enough to earn 3rd place people’s choice and top 5 judge’s vote. We were one of only two teams to place top 5 in both and we can’t wait to try to do it again.
